Pomace Olive Oil: Pomace olive oil comes from the dregs of the olive paste as the last drops of oil (between 5-8% of the total amount of oil in the olives) are extracted from the skins, pits and ground flesh of the olives. It generally has a much greener color and is not as clear as virgin olive oil.

According to the International Olive Oil Council, olive pomace is a solid material that is produced when making olive oil. Keep in mind that pomace is not restricted to olives. This solid material can be produced by crushing any fruit. When making olive oil, pomace is usually considered a waste product.
Can olive pomace oil replace sunflower oil?
Researchers replaced the sunflower oil in traditional cupcake and torta recipes with olive pomace oil. They found the substitution did not diminish the taste of the baked goods while increasing their shelf life and improving their health profiles.
What is olive pomace paste?
The olive pomace paste, which includes water, skin, olive pits and some olive oil, makes up 80 to 90 percent of the mass of the milled olives. Many producers collect the olive pomace paste after production to separate the remaining oil, representing five to eight percent of the total olive oil yield.
