What is canola deodorization?
Deodorization is the last step in the refinery of canola of all vegetable oils , including canola. Deodorization involves the use of steam distillation with the objective being the removal of any residual compounds which, if retained, could impart an adverse odor and taste to the oil. The oil produced is referred to as "refined oil".
Why is crude canola oil refined?
Crude canola oil is refined in order to remove undesirable minor compounds that make this oil unusable in food products. However, refining can also cause the removal of desirable health-promoting minor components from the oil.
How is canola oil neutralized before deodorization?
Before deodorization, crude canola oil was neutralized using alkaline solution until FFA was decreased below 0.1%, which is a typical target value for oil refinery, at 85 °C using 0.1% phosphoric acid and 48% NaOH.
How do you deodorize canola oil?
After neutralization, neutralized canola oil was bleached at 90 °C for 30 min and under a vacuum of 70¨C80 mbar using acid-activated bleaching earth at 0.5¨C1.0% of canola oil. The bleached canola oil was stored for deodorization experiments in a well-sealed stainless-steel tank and the headspace of the tank was substituted with nitrogen.
